Tuna Poke Galley Towel

SKU: N/A Categories: ,

Poke consumed in Hawaii is ALWAYS better, but this recipe will get you real close. This map features the Molokai Channel and the tip of Oahu. Many watermen cross the “Channel of Bones” (myself included) in many types of self-propelled water craft every year. Doing so makes the Poke at the finish line that much better.

Recipe Features Waikiki Surf Salt

About Surf Salt Recipe Charts

Surf Salt Recipe Charts connect you to a region and its food culture. The charts celebrate regional recipes using indigenous fish, cooking methods and Surf Salt seasonings. They also raise awareness to how beautiful and majestic the fish are. An important reminder to treat the fish and ocean with respect so we can all enjoy it. Surf Salt Recipe Charts make great gifts and look right at home in kitchens, porches, “she sheds”, “man’s rooms” and galleys.

About the Chef

Named “Best Chef” seven years in a row, James Bain’s 30-year career cooking in the Cape Fear region has not gone unnoticed. He was the chef/creator of Harvest Moon Food and Spirits. He’s received a continuous stream of regional and national press and has given hundreds of cooking demonstrations. Other honors include Top 3 Chefs of Southeastern North Carolina, Great Chefs of the Tar Heel State and recognition for serving sustainable seafood.

He opened Epic Food Co, an ocean friendly, healthy café and creator of Surf Salt Seasonings and Surf Salt Recipe Charts.

As a surfer, fisherman, open-ocean swimmer, outrigger canoe paddler and lost-at-sea survivor, Chef Bain is as much a waterman as he is a culinary artist. He has surfed all over the world and still catches good waves with his three boys and wife at home, in the Cape Fear.

“I have spent my whole life in the ocean…I’ve been lost at sea, ridden huge surf, caught monster fish and been chased by sharks. I bait my own hook, clean my catch and this influences how I cook it for dinner. Surf Salt combines my passions for surfing and cooking to create healthy, easy to use seasonings.”  Chef James Bain
